Beef knuckle bones are classified as joint bones.  Generally quite large, they contain something other bones usually donʻt; connective tendon.  Served frozen, the dog will amost immediately find that tendon and lick and chew and lick and chew.  Dogs rarely get tongue or jaw exercise to knuckle bones are the best of the best.
